The preparation is straightforward – roast one carrot, 80g of chopped sweet potato, 80g of tomato, half an onion and two cloves of garlic. Season with a dash of salt, pepper and chilli flakes before roasting at 200C (fan) for 20 minutes.
After roasting, transfer the veggies to a blender, add a touch of coconut milk and 300ml of vegetable stock, and blend until smooth to create a delightfully simple and exceptionally healthy soup.
The recipe has garnered massive approval online, evident by the more than 50,000 likes on Matt’s video. Fans have even offered tips to enhance the soup’s satiating factor.
