If you have been using your air fryer solely for chips, it’s time to rethink.

As the chill sets in, there’s nothing quite like a hearty bowl of soup to warm us up. While shop-bought soups are tasty enough, they can’t compete with the flavour of homemade. However, making soup from scratch can be a bit of a faff, from cooking the veggies until they’re soft enough to blend, to getting the liquid levels just right for the perfect consistency.

But this recipe, hailed as the “easiest soup you’ll make in your life”, changes all that – because you can whip it up entirely in your air fryer. The recipe was shared on TikTok by Bored of Lunch, and requires only a handful of ingredients. Plus, you can even rustle up a scrumptious cheese toastie for dipping.

In his video, the man said: “It’s that time of year when you want to start dipping cheese toasties into soup. Here is an air fryer red pepper soup – it’s probably the easiest soup you’ll make in your life.”

Ingredients

  • 500g cherry tomatoes
  • 3 red peppers
  • 1 red onion
  • 3 garlic cloves
  • 1 tbsp olive oil
  • 1 tsp oregano
  • 1 tsp thyme
  • 250ml vegetable stock
  • 150ml double cream
  • salt and pepper to taste
  • fresh basil to garnish

The method for cooking the soup couldn’t be simpler. Just chop the peppers and onion and pop them in the air fryer with all the other soup ingredients except for the stock, cream, and basil. Cook the veggies for 20 minutes at 200C, then toss in the rest of your ingredients. If you’re equipped with a hand blender, you can whizz everything up right in the air fryer basket. If not, just transfer it to a blender before serving it up.

For those with a two-drawer air fryer, why not whip up a cheese toastie in the other drawer for the perfect dipper? It’s as simple as buttering two slices of bread, sandwiching some cheese and a dollop of Dijon mustard between them, and air frying for seven minutes at 200C.

The straightforward recipe makes four servings and has left viewers gobsmacked, with many admitting they’d never even thought of making soup in an air fryer but are now keen to give it a whirl.

One viewer exclaimed: “Stop it! I’m off to the shops right now.” Another was quick to endorse the method, sharing: “I made this yesterday, and it’s the tastiest soup I’ve ever made. I used normal-sized tomatoes and had loads of skin in the soup after I blended.”
