Soup season has officially arrived and one culinary whizz has revealed a simple method to rustle up a hearty dish. Nathan Anthony, the mastermind behind Bored of Lunch, clarified that creating soup doesn’t have to be an energy-draining task, with his red pepper soup recipe – accompanied by a cheese toastie – achievable in just 20 minutes.

Nathan rose to prominence during the Covid-19 pandemic when he started producing food content on social media during the lockdown, offering quick and easy air fryer and slow cooker recipes. In 2023, he took the book charts by storm with the release of two number-one Sunday Times best-selling cookbooks, The Healthy Slow Cooker Book and The Healthy Air Fryer Book.

This year, he launched two more recipe books, with one of them also securing the sought-after number-one position. Now that soup season is officially upon us, Nathan has wowed his followers with a dish that can be entirely prepared in an air fryer. Yes, you heard it right, soup in an air fryer.

Packed with a plethora of warming vegetables, the soup can be prepared in just 20 minutes using the air fryer. And of course, no soup is complete without a carb-loaded side, so Nathan has paired the recipe with a decadent cheese toastie, perfect for dunking, reports Surrey Live.

In a trending TikTok video, Nathan hailed his creation as “the easiest soup you’ll make in your life”. The viral clip has amassed over 1.1 million views, with an impressive 26,600 likes and 129 comments to boot.

One user, Jen, said: “20mins you say…. So I can have this ready by lunchtime, challenge accepted! “.

Another, Shelleybellxo, shared their experience, writing: “Made this yesterday and is the tastiest soup I’ve ever made. but I used normal sized tomato and had loads of skin in the soup after blend.”

Debi pitched in, saying: “I love soup and a cheese toastie, so comforting,” while NannyBarren expressed a sudden craving: “Stop it! off to shop right now.”

For those keen on trying their hand at air fryer soup-making, here’s what you need for a delicious air fryer red pepper soup.

Air fryer red pepper soup

Ingredients

Soup

  • 500g of cherry tomatoes
  • 3 red peppers
  • 1 red onion
  • 1 tbsp olive oil
  • 3 garlic cloves
  • 1 tsp oregano & thyme
  • Salt and pepper
  • 250ml veggie stock
  • 150ml double cream
  • Handful of fresh basil

Cheese toastie

  • 2 slices of bread, buttered
  • 2 slices of cheddar
  • 1 tbsp Dijon mustard on the bread

Method

Chop the peppers and add to the air fryer with all other ingredients except the cream stock and basil. Cook at 200℃ for 20 minutes

Add in the stock, cream and basil. Blitz in the basket with a handheld blender or transfer to another machine

Build your cheese toastie and air fry for seven minutes at 200℃. Serve the soap in a bowl, dunk your toastie and enjoy!
