Nutrition expert and social media star Emily English has unveiled a protein-packed brownierecipe that doesn’t skimp on taste. The ‘So Good’ author, who’s taken the spotlight with her number one bestselling book in The Times, is wowing her online audience with straightforward yet scrumptious makeovers of our favourite treats, this time boosting the health quotient without sacrificing flavour.

Back in June, Emily took to her feed to share a method for creating rich chocolate brownies, cleverly substituting common ingredients to up the protein content and healthy fats. Designed to serve six, these brownies pack an impressive 9g of protein per portion, reports Surrey Live.

In a genius twist on traditional baking, Emily swaps typical ingredients for healthier alternatives, including breakfast staples, to produce brownies she touts as a “winner”. The culinary twist? Cottage cheese.

She said: “Whenever I see a recipe for a healthy dessert, I’m always highly sceptical; are the swaps actually going to taste any good, and should I not just enjoy the original in a bit of moderation?”

Emily added: “Using ingredients you’d typically have for breakfast, with a balance of protein, healthy fats and fibre. You can adjust the sweetness to your taste, and there’s no weighing scales needed either.”

Fudgy cottage cheese brownies

Ingredients

  • 300g tub of full fat cottage cheese
  • 1 large egg
  • 6 tbsp oats
  • 1 tsp baking powder
  • 20g walnuts
  • 3 heaped tbsp honey or sugar
  • Pinch of salt
  • 1 tsp vanilla extract
  • 2 heaped tbsp high-quality cocoa powder
  • 1/2 tsp instant coffee (optional)
  • Zest of 1 orange
  • Yoghurt, honey and berries to serve

Method

Preheat the oven to 160℃ fan. Place all the ingredients into a blender and blend until smooth.

Pour into a lined baking dish or loaf tin. Bake for around 20 to 25 minutes until just set to keep it fudgy. If it looks too runny, cook for another five minutes.

Remove and cool for one to two hours before slicing and serving with yoghurt and honey. You can warm up to make extra fudgy when eating. The brownies should be stored in the fridge.
