Muffins reign as the quintessential sweet treat, and when combined with the classic flavours of toffee and apple, they become a seasonal pleasure.

Drawing inspiration from the serendipitous creation of toffee apples by confectioner William Kolb, who accidentally immersed an apple in melted toffee, these cakey delights pay homage to the treat that’s since become an autumnal fixture, perfect for when UK apples are in prime bounty.

On his TV series “Sweet Baby James,” dessert aficionado James Martin shares how effortlessly one can whip up his toffee apple muffins, claiming they’ll be ready “no time to make”.

He touts the “delicious” results of the recipe, which requires less than an hour and a mere 10 ingredients to prepare, reports the Express.

Ingredients

  • Two free-range eggs, lightly beaten
  • 80g caster sugar
  • 240ml milk
  • 100g butter, melted
  • 300g plain flour
  • Two tsp baking powder
  • 1/2 tsp salt
  • Pinch of cinnamon
  • Two eating apples, peeled, cored and finely chopped
  • 200g shop-bought toffee pieces

Method

  1. Preheat the oven to 190C and prep a 12-hole muffin tin with liners, opting for muffin cases over the typically smaller cupcake ones.
  2. Commence by combining eggs, sugar, milk and butter in a large mixing bowl. Proceed to sieve in the flour, baking powder, salt and cinnamon, then folding everything together.
  3. Following this, fold in the apple chunks before filling each muffin case to a quarter full using half the batter, followed by sprinkling a few pieces of toffee on top.
  4. Top up the remaining filling until the cases are half full, then pop them in the oven for 30-35 minutes until they’ve risen nicely and turned golden. Once baked, shift the muffins onto a wire rack to cool down a bit before serving.
