- 2 large ripe bananas
- 100g medjool dates (pitted weight), soaked and then drained
- 230g oats
- 300ml milk of choice
- 1 tsp vanilla extract
- 1 pinch salt
- 1 tsp baking powder
- 2-3 tbsp maple syrup (optional)
Caramel Sauce Topping
- 5 tbsp smooth almond butter
- 3 tbsp milk of choice such as oat, soya, almond
- 3 tbsp maple syrup or syrup of choice
- 1/2 tsp vanilla extract
- 1 ½ tbsp coconut oil, melted
- Salt
Method
Commence by preheating your oven to 180C and readying an 8×8″ (or an equivalently-sized) baking dish with grease.
Firstly, blend the soaked and drained dates with milk until smooth. Mash the bananas in a large bowl before adding the milky date mixture and the remaining baked oats ingredients, mixing thoroughly.
For those who enjoy a bit of texture, additional chopped dates can be added to the mix. Pour the mixture into a greased tin and bake for approximately 25 to 30 minutes, or until it turns golden brown.
