Soup is nourishment for the soul during the winter months, and it’s an easy staple to turn to when you need to bung ingredients together to create a quick dish. The amazing thing about soup is that you can throw any vegetables together to create something delicious, meaning you can minimize food waste.

To prove just how simple rustling up a soup can be, Nate Anthony, the brains behind Bored of Lunch, shared his easy vegetable soup recipe in a new TikTok video, made completely in a slow cooker. He also paired his soup with a sumptuous cheese toastie for the “ultimate comfort food” dish.

Mob previously wrote about the wide range of benefits slow cookers have, especially when cooking during the winter months. Slow cookers can be a good way to stretch your food budget by using cheaper cuts of meat.

The appliance can also help you save on your energy costs. Mob wrote: “Slow cookers use less energy than traditional ovens and stovetops, making them an eco-friendly option for cooking. Considering the current state of the melting ice caps – that’s a very good thing.”

His recipe has already been viewed over 27,000 times. Nate previously attempted to make an entire soup in the air fryer.

But if slow cookers are more your thing, here is what you need to do to rustle up a simple veg soup.

Slow cooker vegetable soup

Ingredients

  • 2-3 potatoes, peeled and quartered
  • 2 leeks, sliced
  • 3 celery sticks, chopped
  • 2 carrots, chopped
  • 1 onion, finely diced
  • 2-3 tbsp butter
  • 1 tbsp garlic
  • 3 sprigs fresh thyme
  • 1.2L vegetable broth
  • 200ml milk
  • Salt and pepper
  • Fresh chives, to garnish

Method

Chop all your vegetables and toss them into the slow cooker with vegetable broth, butter, thyme, salt, and pepper. Cook on high for three hours or low for five hours.

Once cooked, add in some milk to get your desired creaminess, then blend everything together with an immersion blender. Top with some fresh chives.

Pair it with a cheesy toastie made in the air fryer for the ultimate comfort meal.
