You can revamp your Christmas leftovers to make the ultimate mac and cheese.

Laura Wilkinson, known as @eatingwithkids on Instagram, shared a delicious recipe on Instagram. And if you have any extra pigs in blankets, it’ll be perfect for you.

We know what you’re thinking, who hasn’t scoffed all their pigs in blankets?! But after a week of festive eating, it’s nice to turn the leftovers into something a bit different.

To whip up this heavenly comfort food, you’ll need 12 mini pigs in blankets, 40g of unsalted butter, 40g of plain flour, 450ml of milk, 150g of mature cheddar, a teaspoon of Dijon mustard, 250g of macaroni, 30g of panko breadcrumbs, half a teaspoon each of garlic granules and dried sage, plus a tablespoon of olive oil.

How to make pigs in blankets mac and cheese

  • Preheat the oven to 180C
  • Put the pigs in blankets on an oven tray. Bake for 20 minutes
  • Meanwhile, prepare the sauce and breadcrumb topping. Start by grating your cheddar
  • In a mixing bowl, combine breadcrumbs, sage, garlic granules and olive oil to create the topping
  • Cook the macaroni according to the packet instructions
  • Melt the butter in a pan on low heat
  • Gradually whisk in the flour, then add milk bit by bit, whisking continuously. This will prevent lumps
  • Once you have a thick white sauce, stir in some mustard and the grated cheese
  • Drain your pasta and mix it into the sauce
  • Remove the pigs in blankets from the oven and set them aside
  • Finish by pouring the macaroni cheese into an oven dish and neatly top with breadcrumbs and the pigs in blankets
  • Bake the dish in the oven for 15 minutes
  • Serve with chopped chives, leave it to cool for 5-10 minutes, then enjoy!

It’s as easy as that! Just make sure you’re enjoying the indulgent recipe in moderation. Speaking to her 132,000 followers, Laura warned: “This meal is high in salt due to bacon, sausage and cheddar. If making for the family, serve a small portion for babies and you can lower the amount of cheese if you prefer.”
