Whilst most cheeses are known for their relatively long shelf life, improper storage can cause them to go off rather swiftly. Storing cheese correctly is crucial to extending its freshness and avoiding the development of mould.

NRC Business Waste’s waste experts have revealed that the secret to keeping cheese fresh lies in the handling of moisture, particularly in high water-content cheeses like havarti, mozzarella, and gouda. They explained: “Cheese, especially softer varieties like havarti, mozzarella and gouda, contain high water content, which makes them more prone to spoilage.”

They caution against wrapping these cheeses in plastic or clingfilm as it can trap moisture and promote faster mould growth, reports the Express.

The experts stated: “The plastic creates a breeding ground for bacteria and mould – and not the tasty kind.”

They recommend using parchment paper for storing block cheeses such as cheddar or parmesan, allowing the cheese to breathe while being shielded from moisture. The pros advise: “Wrap the cheese in parchment, secure it with tape, and write the date of opening on it.”

This method does wonders for both reducing mould and preserving the cheese’s texture, they added.

For soft cheese, which spoils quicker than hard variants, there are specific storage tips. Removal of any foil or film after opening and replacing it with tight clingfilm is suggested for soft cheeses.

The experts remarked: “This helps ensure an airtight seal, which is important for preserving soft cheeses.”

Plus, Tesco Real Food suggests freezing hard cheeses, handy for clearing out the fridge post-Christmas.

This includes cheeses like cheddar, red Leicester or comté which can be grated and then frozen in airtight containers. This method allows for easy use of handfuls as needed, perfect for making macaroni cheese or melting into a dip.

To prevent freezer burn, it’s advised to wrap the container with tinfoil or clingfilm. It’s also recommended to store cheeses in the fridge for no more than three months to avoid freezer burn and ensure the original taste returns when defrosted.
