As the chilly January weather sets in, plenty of us are seeking out cosy yet healthy dishes to enjoy in the comfort of our homes.

And it’s difficult to find a more satisfying option than a hearty bowl of soup, with so many different flavours to explore. Opting for a classic tomato is a great choice, and rather than grabbing a tin from the cupboard, why not try making your own from scratch?

For those partial to a velvet-smooth tomato soup, the recipe shared by Love Island and Strictly star Zara McDermott should catch your attention. Shared on TikTok last year, she described it as ‘hearty, warming and wintery’, highly recommending a delicious grilled cheese sandwich for company.

Preparing most soups, including this one, is a breeze – it’s simply a matter of preparing your vegetables for roasting and blending them after, reports the Express.

The soup’s richness is elevated with the inclusion of cream and creme fraiche, and for that extra dash of finesse, Zara suggests a final drizzle of cream just before serving.

In the comments, people were full of praise for the soup, with someone stating: “Love a good tomato soup, you seem like such a good cook.”

Another said: “I had this the other day it was elite.” A third said: “Looks delicious!”

Here’s how to make it at home, as reported by the Express.

Creamy tomato soup

Ingredients

  • 1kg tomatoes
  • Two red peppers
  • Bulb of garlic
  • Olive oil
  • Seasonings of your choice – for example, basil, oregano and thyme
  • Salt and pepper
  • 200ml chicken stock
  • One tbsp creme fraiche
  • Two tbsp single cream, plus extra for drizzling
  • Bunch of fresh parsley

    Method

    Firstly, get your oven warmed up to 180C while you prepare the veggies. Chop up the tomatoes into quarters, slice the red peppers and slice off the top of the garlic bulb.

    Next, grab a baking tray and pop your veggies on it, drizzle over some olive oil and sprinkle a teaspoon of each of your seasonings. Add a bit of salt and pepper, then give it all a good stir to mix it up.

    Roast in the oven for about an hour, giving it a stir halfway through so nothing gets burned. Then, take the vegetables out and place them into a blender along with the stock, creme fraiche and cream. Whizz everything together before dishing up into bowls.

    Add a swirl of extra cream on top along with some fresh parsley and more salt and pepper to taste, and tuck in.
