As we embrace the New Year with resolutions to eat healthier, incorporating veggies into your diet need not be dull. Vegetables might lack the allure of other foods, but a sprinkle of pantry staples can elevate them to new heights.

If you’re aiming to improve your nutrition or get fit in 2025, it’s crucial to learn how to prepare meals that excite you without feeling deprived. To add some pizzazz to your meal prep, a culinary enthusiast has shared an easy cauliflower recipe on social media.

In the Bariatric Meal Plan and Recipes 2025 Facebook group, Anna claimed that her oven-baked cauliflower surpasses the taste of meat. Earlier this month, she posted: “Baked cauliflower tastes better than meat! Crispy roasted cauliflower. Simply delicious!

“My Crispy Roasted Cauliflower recipe is a testament to the versatility and deliciousness of this humble vegetable.”

Anna’s dish has quickly become a hit online, amassing over 1,900 reactions, 280 comments, and 755 shares, reports the Express. Fellow food lovers have been quick to commend the recipe, with Sylvia saying: “Going to try this in my air fryer.”

Chela commented: “Wow I wish I could climb through this screen that is screaming delicious.”

But don’t feel you need to limit this recipe to just cauliflower, as the steps are so simple that it can be used for any veggies you like. Simply whip up the veggies on their own or pair it as a side to your main meal.

Crispy roasted cauliflower

Ingredients

  • 1 head of cauliflower
  • 3 tbsp olive oil
  • Salt and pepper to taste
  • Optional: garlic powder, paprika, or any spices of your choosing

Method

Preheat your oven to 220°C/425°F. Cut the cauliflower into bite-sized florets.

In a bowl, toss the cauliflower with olive oil, salt, pepper, and any spices you want. Spread the florets on a baking sheet in a single layer.

Roast for about 25 to 30 minutes, flipping halfway through, until they’re golden and crispy.
