Whipping up a meal on a busy weekday can be quite the task, as many of us don’t fancy spending hours in the kitchen post-work. However, with the right recipe, you can rustle up a home-cooked feast in no time.
Kathryn Doherty, culinary expert and creator of Family Food on the Table, has revealed her chicken curry dish is “freaking delicious” and can be made in a mere 15 minutes. She commented: “It’s one of my family’s favourites. We love some Indian flavors and cuisine, and this is a super simple, shortcut version to make at home.”
The preparation for this scrumptious meal takes just five minutes, with a cooking time of only ten minutes, ensuring a delightful dinner without any hassle or hard work.
What’s truly splendid about this curry is that it’s all whipped up in a single pot, so you’ll even cut down on your washing up time afterwards, reports the Express.

Here’s how to make quick chicken curry
Ingredients:
- 340g of cooked chicken (you can use leftovers if you wish)
- 175g of plain Greek yogurt (non fat, two percent or five percent fat)
- One small yellow onion (chopped)
- Two cloves of garlic (minced)
- One can of chopped tomatoes (drained)
- 75ml of chicken broth
- Salt and pepper
- A quarter teaspoon of cayenne pepper (optional)
- Two teaspoons of extra-virgin olive oil
To serve (optional):
- Parsley
- Coriander
- Naan bread or rice
Recipe
Start by heating olive oil in a large skillet pan over medium heat.
Dice the onion, toss it into the pan, and saute for five minutes until tender. Then, mince the garlic and fry it off for half a minute.
Now, blend in the curry powder, chopped tomatoes, and chicken stock. Season the mix with salt and pepper (add cayenne too if you like a kick).
Let the curry simmer gently and leave it to thicken slightly over three minutes.
Add the pre-cooked chicken and stir for an additional two minutes until it’s thoroughly heated.
Switch off the stove and blend in the Greek yoghurt until it’s fully incorporated.
Finish by sprinkling parsley and cilantro on top, and your tantalising chicken curry is ready to be served.
