Deciding on a lunch option daily can be tricky – you’re after something quick yet delicious, and at times, a sandwich won’t cut it. But for those with an air fryer, there are so many quick and often healthier meal prep options compared to traditional cooking techniques.

Not only can it handle typical oven-friendly snacks and foods, but the air fryer can also be used for more interesting meals, such as chicken fried rice – a beloved staple from local Chinese restaurants. TikToker Bored of Lunch has shared a recipe for this classic dish that’s entirely air-fried in under 15 minutes, reports Lancs Live.

It’s a healthier alternative to your usual takeaway and faster too, ensuring a speedy meal that doesn’t compromise on taste. You can use a packet of microwave rice to simplify the process further, and it’s also packed with fresh vegetables like onions, carrots, and peas.

Air fryer chicken fried rice

Ingredients

  • Diced chicken breast
  • Low calorie spray
  • One heaped tsp curry powder
  • Two micro bags of rice
  • One tbsp hoisin sauce
  • One tbsp oyster sauce
  • One tbsp soy sauce
  • One tsp sesame oil
  • One tbsp garlic purée
  • One tsp ginger
  • 1/2 a tsp Chinese five spice
  • One grated carrot
  • One onion finely chopped
  • One small can of drained peas

Method

  1. Put the microwave rice into a bowl and add the hoisin, oyster, soy sauce and sesame oil, as well as the garlic and ginger puree and the Chinese five spice.
  2. Then, add the diced onion, grated carrot and peas, and give it a good mix to combine, setting it aside whilst you prepare the chicken.
  3. In a separate bowl, add the diced chicken and coat it in the curry powder, low calorie spray and a pinch of salt, mixing it together.
  4. Then, air fry it for seven minutes at 200C. When it’s done, add in the rice mix and toss everything together, before air frying for another five minutes.
  5. This dish is best served with some curry sauce, but also works perfectly on its own.
