This recipe, from his 5 Ingredients Quick and Easy Food cookbook, is whipped up in no time and requires only a handful of quality ingredients. Ready in a mere 16 minutes, this pasta recipe serves two and can be prepared in a few simple steps for the ideal cosy weeknight dinner, reports the Express.
Ingredients
150g dried trofie or fusilli
Two cloves of garlic
250g mixed mushrooms
25g Parmesan cheese
Two heaped tablespoons half-fat crème fraîche
Method
To start, cook the pasta in a pot of boiling salted water, following the instructions on the package. Once done, drain the pasta, making sure to set aside a mug of the cooking water.
While the pasta cooks, peel and finely slice the garlic. In a large non-stick frying pan, heat half a tablespoon of olive oil over medium-high heat, then add the garlic.
After a minute, toss in the mushrooms, tearing any larger ones into pieces. Season the mixture with sea salt and black pepper, and sauté for about eight minutes until the mushrooms turn golden, stirring occasionally.
Combine the drained pasta with the mushrooms, adding a splash of the reserved cooking water.
Finally, incorporate most of the grated Parmesan and the crème fraîche, adjust the seasoning to your taste, and serve topped with a sprinkle of extra Parmesan.
