Indulging in rich, thick cream while trying to eat your five a day is no longer a guilty pleasure. When enjoyed in moderation, this tasty ingredient pairs perfectly with leafy greens and root vegetables, especially in a delicious soup.
You don’t need a soup maker to whip one up from scratch – a standard blender can achieve a silky smooth texture with just a few basic ingredients. Foodie Jamie Milne shared a simple recipe on her TikTok profile (@everythingdelish) for a veggie-packed treat.
“This creamy veggie soup has seven different vegetables in it, and it’s super easy to make,” she wrote. “It’s also one of my favourites-let’s go!”
Jamie chose a colourful selection of veggies like courgette, carrots, and peppers, but assured fans that any alternatives would work just as well, reports the Express. The key to a sublime soup is using an abundance of veggies, which creates a heartier consistency and amplifies the flavour with liberal seasoning.

Creamy vegetable soup
Ingredients
- Six whole carrots peeled
- Two courgettes, sliced
- One red pepper quartered
- One white onion, quartered
- Four to six large tomatoes, halved
- Two bulbs of garlic
- Olive oil
- Salt and pepper
- Seasonings – mixed herbs, chilli flakes, oregano
- Double cream or coconut milk
Method
Preheat your oven to 220C and line a baking sheet with parchment paper. Wash and chop the veggies into chunky pieces, leaving the carrots whole but peeled.
Spread them out on the baking sheet, add two unpeeled garlic cloves with snipped tops, and drizzle with olive oil. Don’t forget to season generously with salt, pepper, and herbs to bring out the earthy flavours.
Pop the tray of veggies into the oven for a good 40 to 45 minutes, giving them a check at the halfway point. Once they’re nicely roasted, shift them over to a food processor or a sizeable mixing bowl.
Let the roasted garlic cool down before giving it a good squeeze in, then season with salt and pepper. Pour in some boiled water that’s been left to cool for a few moments, then blitz the lot until you’ve got a smooth mixture.
Stir in the cream or milk and give it another quick blend. Ladle your finished soup into bowls and add a drizzle of cream or coconut milk on top for an extra creamy touch.
Season with a sprinkle of black pepper and garnish with a few fresh basil leaves. If your soup needs a bit more heat, pop it into a large pot and bring it to a boil on the hob.
Serve up with some toasted bread or savour it just as it is.
