A key component of many a Christmas dinner is the humble parsnip – and Jamie Oliver has a recipe that promises to take them to new heights.

His roasted parsnips recipe offers a “real festive feel” and they’re straightforward to prepare, reports the Mirror. They serve eight as a side dish, and take an hour and 20 minutes to make – but they’re absolutely worth it.

The recipe description, per Jamie’s website says: “The acidity of the vinegar cuts through the sweetness of the parsnips beautifully here, and the combo of bay and honey adds a real festive feel. For the best results, don’t peel them.”

Roasted parsnips

To make them taste divine, you will need:

Ingredients

  • 1.5 kg medium parsnips
  • 50 g unsalted butter
  • 4 fresh bay leaves
  • 1 tablespoon white or red wine vinegar
  • 2 tablespoons runny honey

The process may seem lengthy at first glance, but it’s actually quite straightforward.

  1. Start by preheating the oven to 180C/gas 4. Then, scrub the parsnips and blanch them whole in a large pan of boiling salted water for five minutes.
  2. After this time, strain them and let them steam until dry. Place them in a large roasting tray, dot with butter, and season with sea salt and black pepper.
  3. Toss them to ensure they’re fully coated, and arrange them in a single layer. They then need to be roasted for one hour in the oven.
  4. After an hour, remove the tray from the oven, quickly scatter over the bay leaves, and drizzle with the vinegar and honey. Toss them again, and roast for a final ten minutes, or until they’re beautifully golden.
  5. Once prepared, these can be served as part of a festive feast or to enhance your regular Sunday roast.
